Here is our easy, must-try ultimate comfort food recipe, Chicken Noodles. Cozy, tender egg noodles and chicken in a thick, rich broth served over a large helping of the creamiest mashed potatoes is super easy to prepare with just a handful of basic ingredients.

This classic meal is also known in the Midwest as Amish chicken noodles. Growing up this was without a doubt one of my favorite childhood meals. And since beginning to eat gluten and dairy free over 13 years ago, this was one of the meals I missed the most.

I mean have you ever tried egg noodles before? They are incredibly delicious and tender– just so good!

And this isn’t a “soup” recipe. Instead this is a hearty, comforting dish of noodles and chicken in a thick sauce served over a side of mashed potatoes.

Growing up in an Amish community with Amish babysitters, friends, classmates, and family, this recipe was frequently enjoyed by all… handing plates of this across the dinner table to each other. And my mom always had to prepare enough for seconds and leftovers. Plus this was and still is commonly found on the menu in local restaurants.

  • creamy mashed potatoes— we absolutely love our go-to mashed potato recipe. We use a secret ingredient that makes them ultra creamy and buttery every single time. Or use your favorite homemade recipe.
  • chicken broth or stock— we prefer the Pacific brand
  • shredded chicken— if you want to make this recipe as easy as possible, use canned Valley Fresh Organic Chicken. Here is their allergen statement. Baked, slow cooked, and rotisserie chicken also have wonderful flavor and can be used.
  • gluten free dried egg noodles— we use the Jovial brand gluten free egg tagliatelle. This brand is gluten free, dairy free, soy free, peanut and tree nut free.
  • kosher salt
  • ground pepper
  • optional— you can also substitute shredded beef and beef stock for chicken

what gluten free egg noodles work with this recipe

At this time we’ve only found these egg tagliatelle noodles by the Jovial brand in the US. We purchase them at Walmart, our local health food store, and online at Amazon.

can beef be substituted for the chicken

Yes, shredded canned beef with beef broth also tastes absolutely delicious in this recipe. For the shredded beef substitute, you can also use slow cooker shredded beef or canned beef. And gluten and dairy free free broth.

how is this served

We make a bed of mashed potatoes in a bowl and then use tongs to transfer the long egg noodles onto the plate. Lastly with a ladle with scoop out the thick sauce and shredded chicken. Then top with salt and pepper to taste.

can this recipe be made ahead of time

While this gluten free and dairy free dinner recipe is best served the day it is made, you can also make it a day or two in advance. Here are our tips– prepare the creamy mashed potatoes as directed, and after they have completely cooled, transfer to an airtight container and refrigerate. We suggest rewhipping the potatoes when you reheat them to serve.

To prepare the chicken noodle mixture, we suggest preparing the mixture as directed, allowing to cool completely, and refrigerating until ready to serve. Reheat just before serving.

Ingredients

  • mashed potatoes recipe link in post
  • 2 quarts chicken broth/stock
  • 2 5 oz canned chicken drained, or 2 baked and shredded chicken breasts or shredded rotisserie chicken works too
  • 1 box gluten free egg noodles suggestion in post
  • kosher salt to taste
  • ground pepper to taste

Instructions

  • Prepare mashed potatoes according to directions (use our recipe link or your own favorite recipe). Cover with aluminum foil to keep warm.
  • In a large stock pot over high heat, add in the chicken broth and canned chicken.
  • Once mixture begins to boil add in egg noodles. Cook until soft, stirring often.
  • Serve over a scoop or two of mashed potatoes. Season with salt and pepper.
  • Cover and refrigerate leftovers. We suggest refrigerating leftover mashed potatoes and chicken noodles separately up to 4 days.
