Gluten Free Lasagna Soup (Dairy Free too!)

This easy one-pot Gluten Free Lasagna Soup has the flavors of homemade lasagna without all the work or assembly. You’ll find your favorite Italian ingredients perfectly simmered and ready to serve with fresh basil and topped with a dollop of dairy free ricotta to add creaminess to this dairy free soup.

It'’s one of the easiest soup recipes especially since it uses lots of pantry staple ingredients.

With chunks of Italian sausage, ground beef, baby spinach, green bell pepper, diced onion, and garlic combined with tender lasagna noodles, this meal is a standout.

Depending on what fresh ingredients we have on hand determines the extras in this soup such as spinach, mushroom’s, bell peppers.

  • ground beef
  • ground Italian sausage— always double check the label, some brands add gluten to their sausage mix.
  • oil- we like olive oil, but you can use any cooking oil
  • onion
  • fresh garlic
  • green bell pepper— this is optional, though it adds lovely flavor to the soup
  • tomato paste
  • marinara sauce— Rao’s Marinara Sauce tastes delicious but you can also use homemade sauces
  • red pepper flakes
  • dried parsleyoregano, and basil— double check your ground spices are gluten and dairy free
  • chicken broth-- can swap this out for beef broth
  • gluten free lasagna noodles— We use Tinkyada brown rice pasta “lasagna” found here. Jovial also sells a brown rice lasagna gluten free pasta.
  • fresh spinach— optional, but this adds wonderful flavor
  • salt and pepper
  • optional— mushrooms, zucchini, fresh basil, and dairy free ricotta (soy free too). There are several homemade dairy free ricotta cheese recipes on Pinterest too.

How to Make Gluten-Free Lasagna Soup

  1. In a large stock pan over medium heat, cook the ground beef and sausage until browned. Drain grease.
  2. Add in onion and garlic. Saute for 5 minutes, stirring occasionally. Add in diced green bell pepper and other optional veggies– diced zucchini or sliced mushrooms.
  3. Then add in tomato paste, marinara sauce, spices, and broth.
  4. Now bring to a boil.
  5. Add in broken lasagna noodles and reduce heat to medium. Occasionally stir noodles.
  6. Just before noodles are tender to serve, 8-9 minutes, add in spinach and dairy free cheese of choice.
  7. Serve with a dollop of dairy free ricotta, and fresh basil.

Storage

Dairy free lasagna soup is best served the day that you make it. Once you add the gluten-free lasagna noodles, they'll start to break down in the soup.

If you know you'll have extras, we like to wait to add the lasagna pasta to each serving when we are serving the soup.

This soup should be stored without the noodles if possible.

Transfer the soup to an airtight container and refrigerate leftovers for up to 3-4 days.

Can I freeze lasagna soup?

You can easily prepare this soup ahead of time and freeze it without the noodles, spinach, and cheese in a freezer safe container.

When ready to serve, thaw soup in the refrigerator and reheat over the stovetop. Add in noddles, spinach, and cheese as the recipe card directs.

What to serve with healthy lasagna soup?

We love a good bowl of lasagna soup with some warmed Udi’s French dinner rolls or your favorite gluten free garlic bread! Add a nice green salad with it and it's a complete meal.

Drizzle melted dairy free butter over them and sprinkle with your favorite Italian herbs and garlic powder. We try to always have some of these stashed in our freezer for this soup.

It’s the perfect meal combo along side steamed broccoli or green beans.

Another idea is the frozen French baguettes from Udi’s you can find in the frozen aisle of grocery stores. Sliced and topped with butter these are heavenly too.

Variations and Tips

  • If you don't have the individual spices, you can use an all purpose Italian seasoning for this one pot meal.
  • There is no need to boil lasagna noodles prior to placing them in the soup. Instead break each noodle into 3-4 smaller pieces, then drop them into the soup as the recipe card directs, stirring occasionally.
  • Feel free to stir in your favorite dairy free cheese (Kite Hill and Violife have been brands that we enjoy with this) like parmesan cheese, mozzarella cheese or ricotta- all dairy free of course into this hearty soup to bring a nice creamy flavor.

Ingredients

  • ½ lb ground beef
