Over the past few years, this has been one of our go-to recipes on busy nights.

As a result, we learned to keep the pantry stocked with sun-dried tomatoes and nutritional yeast so we can enjoy this creamy sauce on our favorite pasta recipes anytime we want.

  • sun-dried tomatoes in oil-- we suggest this 8.5 ounce jar of Bella Sun Luci Sun-Dried Tomatoes with Italian herbs; here is their allergen statement. This can be purchased here on Amazon. Or here is a guide to DIY safely at home.
  • gluten free all-purpose flour-- our go-to is Bob's Red Mill Gluten Free 1 to 1 Baking Mix. We buy it in bulk to save money here.
  • chicken stock/broth-- vegetable stock works if you don't have chicken broth or chicken stock. Pacific Brands offers their manufacturing statement here. That's the brand we prefer for this perfect weeknight dinner.
  • canned coconut milk-- this is not the same as refrigerated coconut milk
  • Dijon mustard-- we recommend Annie's Organic. Here is their manufacturing statement.
  • nutritional yeast-- we keep this stocked in our pantry
  • garlic powder
  • fresh spinach-- if you love spinach like we do, you can toss even more spinach into this recipe than the recipe card calls for, or you can leave it out altogether
  • kosher salt
  • ground pepper
  • gluten free pasta noodles-- keep scrolling for our favorite suggestions in this recipe. You can easily stretch this recipe to include more servings by adding more pasta.
  • optional-- grilled chicken slices, sautéed shrimp, baked bacon crumbles, sliced mushrooms, sauteed broccoli
  • garnishes-- fresh chopped parsley and dairy free parmesan cheese

How to Make Sundried Tomato Alfredo Sauce (dairy free)

  1. In a large skillet, add dairy free butter and sun-dried tomato oil to a saucepan on medium heat until the butter is melted.
  2. Then add in the gluten free flour and briefly fry it. Add in the chicken stock and coconut milk.
  3. Whisk to remove any clumps.
  4. Continue stirring until the sauce begins to boil and thicken. This sauce will continue to thicken as it cools.
  5. Remove the sauce from the heat and allow it to thicken more.
  6. As the sauce thickens for a minute, stir in the Dijon mustard, nutritional yeast, garlic powder, ground pepper, salt, spinach, and sun-dried tomatoes.
  7. Cook pasta according to package instructions. Top pasta noodles with sauce and combine. Garnish with chopped parsley, shopped bacon, and parmesan cheese if desired.
  8. Serve immediately.

Storage
