- gluten free all-purpose flour-- (spoon and level method) our favorite is Bob's Red Mill Gluten Free 1 to 1 Baking Flour. We purchase it here to save money. This blend contains xanthan gum.
- xanthan gum-- omit if your gluten free all-purpose blend contains this or guar gum
- brown sugar-- packed; you can use either light or dark brown sugar
- baking powder-- did you know this loses its potency after the container has been opened for six months? We always suggest labeling the container with the date you open it.
- baking soda-- apply the baking powder tip to your baking soda containers too
- kosher salt
- ground cinnamon-- we stock our pantry with McCormick brand spices
- ground ginger
- ground cloves
- ground nutmeg
- dairy free butter-- we use Earth Balance Buttery Sticks
- dairy free milk-- unsweetened almond milk tastes wonderful in this recipe
- blackstrap molasses-- this is the flavor powerhouse of this recipe. Use only unsulfured, blackstrap molasses.
- nonstick spray-- use this to coat the griddle or skillet before transferring the gingerbread pancake batter. We like using grapeseed oil nonstick spray.
- warm pure maple syrup
- optional-- dairy free butter topped on each pancake, cold So Delicious CocoWhip, or treat yourself to our homemade gluten free dairy free cream cheese frosting for the ultimate breakfast spread
- garnishes-- top with chopped walnuts or pecans or even dairy free chocolate chips. There are endless options!

Ingredients
Dry Batter Ingredients
- 2 c gluten free all-purpose flour spoon and level
- 1 teaspoon xanthan gum omit if your gluten free all-purpose blend contains this or guar gum
- ¼ c brown sugar
- 1½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoon ground cinnamon
- 1 tablespoon ground ginger
- ½ teaspoon ground cloves
- ½ teaspoon ground nutmeg
Wet Batter Ingredients
- 3 tablespoon dairy free butter melted and slightly cooled
- 1½ c dairy free milk
- ⅓ c blackstrap molasses, unsulfured
- optional-- pure warm maple syrup, dairy free butter, whipped topping, dairy free cream cheese, chopped walnuts or pecans
Instructions
- In a large mixing bowl, combine all the dry ingredients and whisk together.
- Combine all the wet ingredients in a medium-sized bowl.
- Then pour the wet ingredients into the dry ingredients and combine well but do not overmix the batter. There will be a few small lumps and that is fine.
- Allow the batter to rest for 5-10 minutes and thicken a little.
- Heat a large skillet or griddle over medium heat. Spray with nonstick spray or use dairy free butter.
- Use an ice cream scoop with a lever release to scoop out the batter and place in a circle shape on the griddle. Allow to cook for 3-4 minutes on each side or until bubbles appear on the batter surface.
- Flip the pancakes and cook for another 1-2 minutes. Continue these steps with the remainder of the batter.
- Serve with warm maple syrup and other optional toppings.
