Ingredients
3boxesgluten free dairy free cake mixwe used King Arthur; enough for two 9x13-inch cakes and two loaf pan cakes
1bagBavarian cream pastry fillinggluten and dairy free, but contains soy
1packagegluten free Oreos, crushedalso dairy free; used for the motocross track
Instructions
Bake two 9x13-inch chocolate cakes and two loaf pan cakes (we used three boxes of King Arthur gluten free cake mix, but any gluten and dairy free flavor works). Remove from the oven and let cool completely.
While the cakes are cooling, prepare your dairy free chocolate buttercream frosting and set it aside.
Once the cakes have cooled, remove them from their pans. Pipe frosting around the outside edge of one 9x13-inch cake, then snip a corner of the Bavarian cream pastry bag and pipe the Bavarian cream filling inside the border. You'll have about 1 cup of Bavarian cream left over — refrigerate it for a future baking adventure.
Place the second 9x13-inch cake directly on top of the filled bottom layer.
Using a knife, carve two ramps out of the loaf pan cakes. Don't worry about getting the cuts perfect — the frosting and crushed Oreos will cover any rough edges. If you have extra loaf cake left over, you can carve a third ramp.
Ice the entire cake — top, sides, and ramps — with an offset spatula.
Crush the gluten free Oreos in a zip-top bag until fine, then sprinkle the crumbs along the path where the motocross trail will run.
Add the trees and bushes alongside the trail, then place the candy rocks as track borders and add the race flags.
Place the motocross figurine on the track right before serving — and don't forget the candles!
Notes
This cake is best enjoyed the day you assemble it. If you have leftovers, remove the decorations and store in an airtight container in the fridge for up to 2 days — between the frosting and the Bavarian cream filling, refrigeration is a must.
