Ingredients
14ozcan full fat coconut milkrefrigerated for at least 4 hours
3tablespoonspowdered sugar
1teaspoonvanilla extract
3tablespoonscocoa powder
¼cupchocolate shavings from a dairy free chocolate bar
Instructions
Prep the coconut milk
First, let's carefully open the coconut milk can use a spoon to remove the thick cream from the inside of the top of the can. Do your best to not remove any of the liquid with the thick cream. It's okay if a small amount gets mixed in.
Place the cream in a large mixing bowl or into the bowl of a stand mixer with the whisk attachment for your mixer.
Whip the cream
In the same bowl, add powdered sugar and vanilla extract. Mix using the stand mixer or an electric mixer on high for about 2-3 minutes, until it's thick and creamy.
Set aside 4 Tablespoons of the whipped cream mixture to use as a topping.
Add the chocolate
Use a sifter to sift the cocoa powder and add it to the cream mixture, ensuring there's no cocoa powder clumps. Beat with the mixer for 1 minute, or until nice and smooth.
Serve the DIY Dairy Free Chocolate Mousse
Transfer the chocolate mixture to a serving bowl and top with the reserved coconut cream if desired. Garnish with chocolate shavings, berries, etc and enjoy.
