Filling

Dairy Free Cream Cheese Frosting
4ozdairy free cream cheese, room temperaturesuggestion in post
¼cdairy free butter, ½ stick room temperature
1½cconfectioners' sugar
½teaspoonvanilla extract or maple extract
optional: ¼ teaspoon corn syrup for a shiny frosting; this can be omitted and the taste will not change
Instructions
Preheat oven to 350°F. Grease an 8 inch pie plate with nonstick spray.
In a large bowl whisk flour, xanthan gum if needed, baking powder, salt, and sugar.
Add butter, eggs, and milk until the mix comes together. You can use a spoon or your hands to mix until you have a nice smooth dough ball. If the dough is too sticky, add in a tablespoon of flour.
Place the dough onto a very lightly floured countertop or parchment paper.
Roll the dough out into a 12 inch by 15 inch rectangle with a rolling pin, adding sprinkles of flour underneath the dough and on top as you roll to prevent sticking.
Take a knife and trim the dough edge so you have a nice rectangle shape.
In a medium size bowl place all filling ingredients and mix.
With your hand or an angled spatula spread the filling evenly over the rectangle, leaving ¼ inch clean space around the edge.
Now starting on the long side roll the dough away from you into a tight log roll. At times the dough might start to crack in areas. Gently pull the dough back together and keep rolling.
With a sharp knife slice the roll into 7 equal pieces.
Place each piece into the pie plate and transfer to the oven for about 35 minutes. All ovens bake differently.
Cream Cheese Frosting
While the cinnamon rolls are baking, mix all the frosting ingredients together in a large bowl with a handheld mixer.
Place into the refrigerator to set.
Once the cinnamons rolls have baked, remove from the oven and allow to cool for 10-15 minutes before frosting.
Frost and serve, refrigerating any leftovers.

Notes
Cinnamon rolls may be prepared and baked the night before and frosted in the morning. Once cooled wrap in plastic wrap and refrigerate. In the morning reheat in the microwave, frost, and serve.
