The Best Gluten Free Pizookie
If you love a good homemade chocolate chip cookie, try it in a cast iron skillet with some dairy free ice cream to make the best gluten free pizookie!

Ingredients
2 ¼
cups
gluten free all-purpose flour

xanthan gum

baking soda

salt
10 oz bag plus ½

dairy free chocolate chips

dairy free butter, 1 cup
melted and cooled, suggestion in post
little over ½
cup
granulated sugar
¾

brown sugar

egg
beaten, at room temperature

teaspoons
vanilla extract
dairy free ice cream

gluten and dairy free chocolate topping

Instructions
Preheat oven to 375° F.
Use coconut oil to grease a cast iron skillet or 9x9 inch baking dish; set aside.
In medium bowl, place flour, xanthan gum if needed, baking soda, and salt. Whisk well.
In a small bowl, place chocolate chips. Set 5-10 pieces aside for the topping. Add 1 tablespoon of the dry ingredients to the bowl and mix. Set aside.
In a large bowl, place the melted butter, sugar, brown sugar, eggs, and vanilla extract . Whisk well.
Add the dry ingredients to the wet ingredients and mix until combined. Add in the chocolate chips and stir well.
Place the dough in the cast iron skillet. Top with ½ c of chocolate chips.
Bake 18-20 minutes for a 10 inch skillet. Bake 16 minutes in a 12 inch skillet. Check frequently towards the end to make sure it doesn't burn.
Remove from the oven. Serve warm with dairy free ice cream and dairy free chocolate syrup.
