Cinnamon Sugar Mixture
1Tablespoonwhite sugar
1teaspoonof cinnamon
2TablespoonsDairy Free Buttermelted
Instructions
Preheat the oven to 375F.
Make your own homemade pie crust or take the storebought pie crusts out of the box and set aside.
Line a baking sheet with parchment paper and set the prepped sheet aside.
Use a vegetable peeler and remove the apple skin.
Chop your apple into small cubes on a cutting board and place them into a mixing bowl.
Add the brown sugar, white sugar, cinnamon, nutmeg and gluten free flour into the large mixing bowl with the apples. Mix using a wooden spoon until the apples are fully coated in all the spices.
Set the bowl aside and lay your flour out on a floured work surface.
If not your dough isn't thin enough yet, use a rolling pin to roll it out to about ⅛ inch thick.
Use the cookie cutter to cut out the 2-incle circles that look like pie pieces.
Once you've cut out your first set of circles, take the leftover dough and reroll the dough out to cut out more pie pieces, until you have 24 dough circles to use.
Lay the first 6 dough pieces on the parchment paper lined baking sheet.
Press the popsicle stick into the dough at the halfway point of each circle.
Using a small scoop, scoop some apple mixture into the center of the round dough pieces.
Place a second pie circle over the top of the filling.
Crimp the edges of the apple pie pops with a fork.
In a small dish, mix an egg white to create an egg wash and brush each pop.
In a small bowl, mix cinnamon and granulated sugar together to create cinnamon sugar mixture. Sprinkle this mixture on top of each of the egg-washed pie pops.
Use a sharp knife to make 4 slits in the center of the top of the pie pop dough.
Bake pie pops for 15 minutes or until the tops of the apple pie pops are golden brown. Remove from the oven.
Melt butter and immediately brush tops of the pops with a little bit of melted dairy free butter and enjoy!
Notes
Always check that your spices are gluten free and dairy free. Some spice companies add hidden dairy or gluten in spices.
If you don't have popsicle sticks, you can use lollipop sticks or a craft stick for each pop.
Make sure you cut the small slit in the crust so the hot air from the filling has a place to be released.
When measuring your gluten free flour, spoon the flour into the measuring cup and use a knife to level it.
If you don't want to use the popsicle sticks to make Apple Pie Pops, you can serve just the mini pies as apple pie pop tarts.
You can add a little tartness to your apple pie filling by adding a squirt or two of lemon juice.
If you don't have the individual spices, you can use apple pie spice.
You can make a double or even triple batch of these pops. You'll need to get a second pie crust to make more.
